Recipe For Preparing Grapefruit Cheese Pie With Rye Bread Pie Crust

The ingredients for the crust of the rye bread pie are:

Unbleached all-purpose flour (one and a half cups)
2/3 cup of rye flour
3/4 tsp salt
16 tbsp cold unsalted butter
1 tbsp natural cane sugar
1 egg yolk
1/2 tbsp vanilla extract
3 to 6 tsp ice water
Preparation of rye bread pie crust

Firstly you need to take a medium-sized bowl and mix well the ingredients such as all-purpose flour, rye flour, salt and cane sugar. Then, add butter to the mixture and beat well (let small lumps remain). Then, you need to add the vanilla extract to this mixture. After that, sprinkle one tablespoon of cold water slowly and stir the mixture (until the dough becomes sticky). Then, you can divide this dough into halves, wrap it with a plastic cover and refrigerate it for an hour. Once it is chilled, you can transfer it to a pie plate. Then fold the eggs. In order to avoid sagging, prebake the crust to 400 F for a period of 15 minutes. Then, brush the crust using egg yolk and again bake it at 350 F for five minutes.
Ingredients for the rye bread pie filling
2 egg yolks and 3 egg whites
2 grapefruits
Half a cup of heavy cream
3/4 tsp salt
One cup of natural cane sugar
4 tbsp unsalted butter (melted)
2 tsp cornmeal (keep some extra for sprinkling)
3 tbsp all-purpose flour

Preparation for the filling of the rye bread pie

For the filling of the rye bread pie, you can use the grated zest of one grapefruit. Make juice out of the remaining grapefruit by peeling it and preserve the segments and juice separately. Whisk the zest and salt into this juice. Also whisk the whites and yolks of the egg until it become creamy in color. Then, you need to stir the grapefruit juice and pour the filling into the pie crust. Now, carefully arrange the grapefruit segments in the custard. The next step is to bake the pie. Transfer it into the oven and bake it at 350 F for 30-45 minutes or till the top becomes brown in color. Now, leave the rye bread pie for 20 minutes for cooling and then serve it.

How To Cook Kaldereta Recipe- Filipino Stew Recipe

Kaldereta is a well known recipe in the Philippines especially in Tagalog region. It is usually cook with beef but aside from beef it can be also cook using duck, goat, and poultry meat. It is usually has a sauce base on tomato and thickened with tomato but other cook kaldereta with coconut cream for extra flavor. Kapampangan (People residing at Pampanga province) are known for cooking the best Kaldereta recipe. Kaldereta originally was a Spanish recipe and adapted it with Filipino taste, it is a product of their 300 year of occupation in the Philippines, and aside from their influences on Filipino cuisine they also influenced us by making Philippines as the only Catholic country in Asia. Kaldereta is a favorite Filipino meal during special occasion, it can be eaten as a viand for rice and also for pulutan (appetizer eaten while drinking alcohol). Here is my method of cooking for this awesome Filipino stew recipe.

Ingredient For Cooking:

1 whole duck, clean ( 2kg)
1 medium size of Tomato sauce
2-3 tbsp minced garlic
1 whole onion sliced
50 gram ginger
cup grated cheddar cheese
1 can of liver Reno spread
1 can of Phillips Vienna sausage
4 pcs potato, peeled and quarter
Red bell pepper
Cooking oil
2-3 cups coconut cream
1-2 carrots, peeled and cut into serving pieces
1-2 pcs Siling labuyo, slice (optional)
Vetsin
Fish sauce (patis)
Ground peppercorn

Direction For Cooking;

In a casserole, bring to boil Duck in a liter of water with ginger, simmer for 5 minute then drain and set aside. In a pan with cooking oil sautee garlic, onion and add Duck meat. Add Fish sauce and simmer for 5-10 minute, add 2-3 glass of water, boil and simmer for 20-40 minute until duck meat tenders, add water if needed ( 1 glass), when meat tenderize include potato, carrots. Add Tomato sauce, ground peppercorn, salt to taste, Vienna sausage and cheese. Taste and add salt if needed, include vetsin and add 2 cups of coconut cream and siling labuyo (Spicy chili) if you prefer your recipe to be hot. Add coconut cream , bring to boil until sauce thickens. Lastly add Reno liver spread to thickened sauce and add flavor. The process is same with goat meat, while for beef it is needed to tenderize the beef first before sauting and lastly for chicken the meat is directly sauted. Served this delicious Filipino recipe with hot steamy rice.

Morcon Recipe Procedure for Cooking:

Wash sliced beef thoroughly, put in strainer and drain excess water. In a bowl, marinate slice beef with a mixture of calamansi and soy sauce for 5-10 hours. Lay flat beef slice on a platter, lay in a piece of ham, bacon, carrots, sausage bacon, pickle, prunes, grated cheese evenly. Roll beef and make sure that the mixture stays inside, secure filling by tying using thread. Roll beef roll from corn starch, fry until it turns into golden brown, set aside. After frying beef rolls, bring to boil meat with 1 liter of water, beef bouillon, cup of soy sauce, ground peppercorn, and vetsin using pressure. When beef tenderize add cup of tomato sauce, bay leaf and simmer for five minute. Remove meat roll into pressure cooker to cool, add Reno liver spread at the sauce to thicken and for extra flavor.

Preparation for Morcon:

Sliced beef and place some in clean big platter, pour thickened sauce at the top. This awesome recipe is perfect with steam white rice or as a sandwich filling. Served while it is hot, enjoy and share.

However, it’s nice to sometimes go back to the standards and enjoy those treats that made pumpkin so popular.

Ready in: 1 hour 55 min

Yields: No. of servings depends on the size of the slices.

Ingredients

1-1/2 cup sugar
1/2 cup vegetable oil
2 eggs
1-2/3 cup all-purpose flour
1/4 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. cloves
1/4 tsp. cinnamon
1/2 tsp. nutmeg
1/2 cup chopped walnuts
1 cup pumpkin, canned or steamed, drained and mashed

How to Prepare

Pre-heat oven to 350 degrees. Spray non-stick cooking spray on a 9 x 5 inch loaf pan.
Combine the sugar, vegetable oil and eggs into a large mixing bowl and set aside.
In a medium mixing bowl, combine the flour, baking soda, baking powder, salt, cloves, cinnamon, and nutmeg.
Add these dry ingredient mixture into the bowl containing the egg, oil, and sugar mixture. Mix until well blended.
Combine the pumpkin and chopped nuts into the bowl and mix well.
Pour into the greased loaf pan and baked for about an hour and a half or until a toothpick inserted in the center comes out clean.
Let stand for about 5 minutes, then turn it onto a bread rack to cool. Serve and enjoy!

In Conclusion
